Cast Iron Bruschetta Baked Brie

Cast Iron Bruschetta Baked Brie
Ingredients
1 large brie wheel
3 roma tomatoes (Chopped)
¼  cup of minced red onion
¼  cup cucumber
fresh basil
1.5 tbsp olive oil
1.5 tbsp balsamic vinegar
salt & pepper to taste
Directions
1
Heat your Oven Brothers wood-fired outdoor oven to 350F
2
With a fork, poke holes in the top of the brie wheel, without piercing the bottom
3
Add the brie to a small cast iron pan and place it into the pre-heated oven
4
Bake for approximately 15 minutes
5
In the meantime, combine tomatoes, onion, cucumber, basil, olive oil, balsamic, salt & pepper then toss to mix ingredients (this can also be done earlier in the day for even more flavour!)
6
When the cheese has softened, remove and top with bruschetta mix
7
Serve with toasted bread, pita or crackers
