Pizza Steels

Pizza steel is also commonly known as baking steel and conducts heat better than a traditional pizza stone (and they don't break). Pizza steels are also popular for baking artisan bread in addition to pizza as they can transfer heat at a high rate and remain extremely stable at a steady temperature. If you place pizza directly on the steel, the dough is baked by a heat transfer stored in the steel rather than in a hot oven. This makes for a crispier crust and a faster cook time.

Using a pizza steel, the entire underside of the pizza is completely and evenly cooked from the outside edges into the middle. You'll find that your cheese will caramelize on the top of the pizza with extra bubbles in the crust. Pizza steel is an ideal surface for baking pizza in your home oven.
